9.1.2. Dining Area

The dining area is a part of the facility where food is consumed by the guests. Normally, it is a dining loungeor a restaurant. For the dining area the important factors are ambience, lighting and ventilation.

It is an essential rule that the dining area shall provide a pleasing and comfortable atmosphere where you can enjoy your meal. Usually a special ambience is created if attention is paid to the design and decors, view, lighting, colour, and a number of the so-called mood enhancers – music, fireplace, etc. Also, the dining area should have a distinctive topic and style corresponding to the general theme of accommodation. It can be, for instance, French country, traditional rural, Middle Ages, Romantic Mountain, bright Family restaurant, etc. Accommodation owners have a great variety of choice that depends on the surroundings, building architecture, regional traditions and your fantasy.

Light can also contribute to creation of a special atmosphere. The customers appreciate shaded lights, open fire in the fireplace, and candles. However, the entrepreneur shall always remember about the essential requirement – lighting should allow the guests to read the menu.

Adequate ventilation ensures comfort of the clients by keeping normal temperature and reducing odours such as cigarette smoke (if smoking is allowed inside) or a peculiar aroma of a very specific dish ordered at the neighbouring table.

The most basic furniture in the dining area consists of tables and chairs. The number of tables and table sizes (for two, four, etc) is determined by the number of rooms and beds available at your accommodation. The shape of the table is important for the atmosphere and space: round tables usually take up a bit more space than squares. To match the style of the dining area, chairs or stools or benches can be preferred. For instance, in a rustic styled restaurant big wooden tables and rough wooden benches are most appropriate. Aside from the basics,the furniture of the dining area may also include a food counter, salad bars, buffet tables and other, depending on the type of serving.

For the impressions of the clients, the quality and presentation of food together with the attitude of the personnel are important as much as the ambience of the dining area (see section 2. Requirements for Communication and Tips for Serving Personnel).
